Health-Support Menu Devised by Faculty of Pharmacy Students to Be Served at Minato City Office Cafeteria (September 17–20, September 24–27)

A menu devised by first-year students from the Department of Pharmaceutical Sciences, Faculty of Pharmacy, as part of their "Introductory Lecture on Early Experiential Learning and Entrepreneurship" course will be served at the Minato City Office Staff Cafeteria, Restaurant Port (serving period: September 17–20 and September 24–27). There are two types of menus, both featuring an abundance of vegetables, mushrooms, and seaweed. They have been carefully designed to be both healthy and satisfying.

The cafeteria is also open to the general public, so we invite you to come and try them.

The dish uses multigrain rice. The ingredients are finely chopped and stir-fried together, making it easy to eat even for those who dislike vegetables. Soy meat is added to make it more substantial. The soup is also packed with vegetables, and the dish is topped with cabbage and a fried egg, allowing you to enjoy a delicious "veggie-first" meal.

The low-fat chicken breast pairs well with the sweet and savory sauce. The side dish features mackerel, which is rich in DHA, seasoned with grated daikon and ponzu sauce for a refreshing taste. This meal allows you to get plenty of dietary fiber, so you can enjoy a hearty meal without worrying about dieting.

As part of their entrepreneurship education, the students undertook the entire process from analyzing the health checkup data of Minato City Office employees, creating personas, conducting literature reviews, and interviewing experts, to developing the final menu. The menu's content was supervised with advice from a registered dietitian at the Minato City Health Promotion Division. Through the cooperation of Minato City, the students gained practical knowledge and the valuable experience of contributing to the local community.
